The Best Sticky Toffee Pudding Ever!

Prep Time :- 20 minutes, Cooking time 60 minutes

Serves :- 4

Ingredients :-

  • 6oz/170g dates, chopped
  • ½pt/10fl.oz water
  • 1tsp bicarb of soda
  • 2oz/55g butter
  • 6oz/170g golden caster sugar
  • 2 eggs, beaten
  • 6oz/170g self-raising flour
  • ½tsp grated fresh nutmeg
  • ½tsp ground ginger

For the sauce:

  • 6oz/170g butter
  • ¼pt/5fl.oz double cream
  • 10oz/285g muscovado sugar

Put chopped dates and water into saucepan and bring to boil. Remove and add the bicarb of soda and leave for 10 minutes to cool. Cream butter and sugar, beat in eggs adding the flour and spices. Add the dates and pour into greased or lined 10” tin/dish.

Bake approx 50-55 minutes Oven 180C, gas mark 4,  Aga – bottom shelf, top oven with metal shelf above.

For the sauce:

Put all ingredients in a pan and dissolve very slowly, stirring.  Bring to boil and simmer for 2-3 minutes.

Pour sauce over the sponge and serve with cream. Very indulgent!
